Easy Pancakes VEGAN
Basic gluten-free vanilla blender pancakes with the cutest whipped coconut cream and raspberry decoration. 

Ingredients
1 cup oats 
1/4 cup corn starch
1 tbsp coconut sugar
1 tbsp baking powder
1/2 tsp ground vanilla 
1,5 cups plant based milk

Blend all ingredients until smooth. Let sit on the counter to thicken. Use 1/4 cup of batter at a time and fry (use some coconut oil if needed) on medium heat until bubbles pop up. Flip and cook on the other side until slightly brown. Repeat with the rest of the batter and serve with your favorite toppings! I love this recipe as it’s super basic and easy but you can definitely upgrade it by adding in bananas, chocolate chips, berries or anything really.

Vegan Burger VEGAN
These are black bean patties with chunky guac, baked sweet potato, sweet corn, lettuce and tomato sandwiched between a whole grain bun.

Ingredients
1 can black beans
1 cup oats
1/2 onion
1/2 clove garlic
Lots of spiced (I used pink salt, pepper, cumin, cayenne)
A splash of hot water

Blend everything in your food processor until well combined and form patties out of the mixture. Fry in some coconut oil on medium heat until firm and cooked through (don’t forget to flip it!) and serve in a bun with your favorite toppings.

Baked Brownie Donuts VEGAN

Ingredients
▢150g oat flour (finely ground oats)
130g ground hazelnuts 
1 tsp baking powder
2 tbsp corn starch
1/2 cup cacao
2 cups plant milk 
1/2 cup coconut oil (or cacao butter)
1/2 cup maple syrup 
1/2 cup dark chocolate chips
A pinch of pink salt

Combine all of the dry ingredients except the chocolate chips in a big bowl and combine well. Add in the liquid ingredients one by one, constantly stirring to avoid lumps. Fold in the chocolate chips and mix well. Grease your donut tin and distribute the batter evenly. Bake at 180C for approximately 35 minutes or until firm.
